Flux Blanc is a Grenache Blanc dominated white blend made of Grenache Blanc (70%) and Rousanne (30%). Grapes were gently whole-cluster pressed and fermented in concrete eggs for 4 months. These eggs have the unique ability of allowing micro amounts of oxygen into the wine much like barrels but without imparting wood flavors. Furthermore, the egg’s round-bottom shape is constantly keeping yeast lees in suspension, which helps develop mouth-feel. The outcome is a huge complex aromatic array of flinty white peaches, honeysuckle, rose petals, apricot and spring flowers. The mouth in incredibly rich with honeyed exotic citrus and refreshing acid balance. This wine is both a sipping wine and a great food wine.
